The only Relais & Chateaux dining room on St. Barth, Restaurant Le Gaiac is also one of the most acclaimed from its helm inside Hotel Le Toiny and its bay that goes by the same name. The space oozes a French sophistication with a light and airy dining room infused with modern décor and old-world service that makes this one of the more formal dining experiences you'll find on the island. Sundays features Brunch du Toiny with a lively dining presentation that pulls out a bit of the fussy formality in a bubbly champagne scene that often spills out onto the pool deck or lounge.
The Food
The restaurant beckons an all-day dining experience by French chef Sylvain Révélant that’s usually enjoyed by hotel guests only in the early morning hours. Lunch is a more public affair as those seeking a dining experience of pumpkin iced soup, local lobster ala plancha or more traditional pan-fried red snapper fillet are well fulfilled. Dinner features many dishes infused with produce grown in the on-site garden for presentations of duck foie gras with smoked wahoo, poached egg with sautéed squid or venison with prickly pear.
Last Word
